    Vegetable fried rice is a delicious and versatile dish that's easy to prepare. Here's a basic vegetable fried rice recipe to get you started:

    Families often enjoy vegetable fried rice as a side dish alongside other main courses such as beef chilli dry, sweet and sour chicken, etc. It's a crowd-pleaser that complements a wide range of Chinese dishes.

    Ingredients

    • Shredded Cabbage 1.5 cups
    • Shredded Carrot 1.5 cups
    • Green Onions ¾ cup
    • Boiled & Shredded Chicken 1 cup
    • Chopped Garlic 2 tablespoon
    • Salt 1.5 teaspoon
    • White Pepper Powder 2 tablespoon
    • Black Pepper Powder 1 teaspoon
    • Soya Sauce 2 tablespoon
    • Vinegar 1 tablespoon
    • Oil 2 tbsp
    • Rice 2 cups
    • Salt 1 tablespoon (for boiling Rice) + 1 teaspoon for seasoning
    • White Pepper Powder 1.5 teaspoon
    • Black Pepper Powder ½ tsp
    • Soya Sauce 1 tablespoon
    • Vinegar 1 tablespoon
    • Oil (1 tablespoon approx. for rice dum)
    • Water 4 cups

    Instructions

    Heat pan, add 2 tablespoon oil, add chopped garlic and saute.

    Add shredded cabbage, shredded carrot, green onion, and boiled & shredded chicken.

    Mix and stir fry for 2 minutes.

    Add salt, white pepper powder, black pepper powder, soya sauce & vinegar. Mix and fry for 5 minutes.

    Boil 4 cups water with 1 tablespoon salt, add rice and boil till done.

    Add the prepared veggies in the rice. Add 1 teaspoon salt, 1.5 teaspoon white pepper powder, ½ teaspoon black pepper powder, 1 tablespoon soya sauce, 1 tablespoon vinegar and mix well.

    Serve with your choice of gravy

    Substitutions

    Instead of white rice you can use brown rice or quinoa for a healthier option.

    Feel free to use any vegetables you prefer or have on hand, such as broccoli, cauliflower, mushrooms, spinach, or zucchini.

    Vegetable fried rice will typically stay fresh for 3-4 days in the refrigerator.
