    This is one of my favorite recipes for the month of Ramadan. This chicken croquettes recipe is simple and a delicious snack. It's made with seasoned chicken and mashed potatoes. These crispy chicken croquettes are easy to make, the one important thing is these are budget friendly and perfect for Iftar.

    I learned this one of the best Ramzan snacks recipe from my mother. She used to make these homemade croquettes when I was a kid during Ramadan. And since then I have loved this recipe. Keeping that tradition alive I make these as Iftar fried snacks and now my kids enjoy these Potato chicken croquettes too.

    Ingredients for Homemade Chicken and Potato Croquettes
    • 5 medium potatoes (boiled & mashed)
    • 1 cup chicken ( Boiled & shredded )
    • 1⁄3 cup carrots (Diced & balanced)
    • 1⁄3 cup capsicum diced
    • 1 teaspoon salt
    • 1⁄2 teaspoon Black pepper powder
    • 1 teaspoon mixed Italian herbs
    • 1⁄2 teaspoon red chili flakes
    • 1⁄2 teaspoon paprika
    • 1 teaspoon chicken powder (optional)
    • 1 Egg (beaten)
    • 2 tablespoon Corn starch
    • 1 cup shredded mozzarella cheese
    • 2 tablespoon fresh parsley
    • 1⁄2 cup All purpose flour
    • 1⁄3 cup water
    • 1 cup breadcrumbs
    • 1⁄2 teaspoon dried parsley
    • Oil as needed

    Step-by-Step Chicken Croquettes Recipe for Iftar

    Mixing chicken, mashed potatoes, vegetables, spices, cheese, and egg for croquette filling

    In mashed potatoes add chicken, chopped carrots, chopped capsicum, salt , black pepper , mixed Italian herbs, chilli flakes, paprika, chicken powder ,egg, corn starch, shredded cheese and parsley.

    Mixing all ingredients thoroughly to make a smooth croquette filling

    Mix everything well until fully combined.

    Shaping croquette mixture into small cylinders or balls

    Take small portions and shape into cylinders or balls.

    Preparing a thick flour and water slurry for coating croquettes

    Make thick slurry of flour and water

    Rolling croquettes in flour slurry and coating them with breadcrumbs

    Roll each croquette in flour slurry and coat well with breadcrumbs.

    Frying croquettes in oil on medium heat until golden brown on all sides

    Heat oil on medium heat and fry the croquettes until golden brown on all sides (about 10 to 12 minutes).

    Uncooked shaped croquettes should be given some in the fridge rest for 20 minutes. This prevents the croquettes from breaking
