Buttered peas are a classic side that has stood the test of time. Originally popular in traditional English and American home cooking, peas tossed in butter became a beloved staple thanks to their sweet flavor and vibrant green color. They’re tender, slightly sweet, and when paired with some creamy butter, they turn into an incredibly satisfying side dish with barely any effort. Whether served as a side with roasted chicken or grilled fish, buttered peas bring some greens to your plate.

Ingredients

- Green Peas (Fresh or Frozen): Fresh peas are a treat when in season, but frozen peas work beautifully too.
- Butter: The star of the show! Butter adds a rich, velvety coating and enhances their natural sweetness of the peas.
- Salt: a pinch brings out the flavor of the peas and balances the richness of the butter.
- Black Pepper: A sprinkle of pepper adds a gentle, savory warmth to the dish.

Instructions

- Step 1: Shell the peas

- Bring a saucepan of water to a hard boil.

- Step 3: Boil the peas for about 60 seconds. When they all rise to the
top, they're done. Remove them from the heat and drain
immediately.

- Step 4: Add the butter in the pan and pour warmed cooked peas and toss them with salt and black pepper. It’s done.
Hint: Don't overcook the peas!
Peas only need a couple of minutes to become tender. Overcooking can make them extra soft and dull their vibrant green color. As soon as they turn bright green and heated through, they’re ready!

Substitutions
Butter: Use ghee instead of butter. It will add even more richness to the peas.
Salt: If you're using salted butter, you can skip salt or add less quantity if required.

Variations

- Cheesy Peas: After cooking, add grated Parmesan for a cheesy, savory kick.
- Lemon Butter Peas: Add some fresh lemon juice before serving for a bright, zesty flavor.
- Spicy Buttered Peas: Add red chili flakes or red chili powder for a little heat.

FAQ
You can, but canned peas are softer and less vibrant. If using canned, drain them well and warm them gently with butter without overcooking.
Simply swap the butter for a good-quality vegan butter or even a drizzle of olive oil.
Buttered peas are best served fresh, but you can prepare them a couple of hours ahead and gently reheat on low heat before serving.
